If you have an instapot but are a little nervous to use it I’m here to tell you it’s easier than you think! I absolutely LOVE the fact that unlike a crockpot, in the instapot I can sauté and pressure cook and even slow cook all in one pot. The MAIN thing to remember is not to forget to turn the valve to sealing or else the pot can’t ever come to pressure and start cooking.
This is a simple and quick but hearty family friendly recipe to make in the instapot. Also possible to make in a slow cooker just adjust cooking time to about 4hrs on high.
- 1.5 lbs chicken breast
- Salt, black pepper, smoked paprika
- 1/2 stick of butter
- 1 Tbsp presses garlic
- 1 Tbsp tomato paste
- 1 can cream of bacon
- 1/2 same can above with water
- 2lbs yellow potatoes large cubes
- 1 cup baby carrots
- 1 Tbsp Parsley chopped
– season both sides of chicken with the dry spices
-add oil to the instapot and select sauté -high and add chicken. Sear on both sides until golden.
-add butter, garlic and tomato paste, sauté for another 1-2 minutes
-stir in cream of bacon and water
-add potatoes, carrots, and parsley. And stir to combine
-select pressure cook- set to 30 minutes
-once the 30 minutes are up let it naturally release for 10 minutes
