This is one of those simple 1 dish recipes. You can customize it to your liking: use any fish you like (preferably a white fish). I hope this gives you a easy weeknight dinner option.
Tip: as a general rule 2/3 of your baking dish should be the potatoes/carrots mixture and fish should be on top in a single layer.
Use a deep oval Casserole dish like this one
- 5 medium potatoes peeled
- 1 large carrot peeled (or more if you like them)
- 1/2 cup of heavy cream
- 1/2 cup of ranch
- 1/2 Tbsp salt
- 1 tsp black pepper
- 1 tsp garlic salt
- 6 fish fillets (I use tilapia)
- 1 tsp salt (or more to taste)
- 1/2 tsp black pepper
- Colby jack cheese shredded
Enjoy hot or warmed up the next day. It keeps well in the fridge for a few days and is a great meal to take to lunch for work or school.
