Potato and fish Bake ~recipe~

This is one of those simple 1 dish recipes. You can customize it to your liking: use any fish you like (preferably a white fish). I hope this gives you a easy weeknight dinner option.

Tip: as a general rule 2/3 of your baking dish should be the potatoes/carrots mixture and fish should be on top in a single layer.

Use a deep oval Casserole dish like this one


  • 5 medium potatoes peeled
  • 1 large carrot peeled (or more if you like them)
  • 1/2 cup of heavy cream
  • 1/2 cup of ranch
  • 1/2 Tbsp salt
  • 1 tsp black pepper
  • 1 tsp garlic salt
  • 6 fish fillets (I use tilapia)
  • 1 tsp salt (or more to taste)
  • 1/2 tsp black pepper
  • Colby jack cheese shredded
  • -Dice potatoes and carrots into large pieces
  • -In the casserole dish mix the ingredients ( heavy cream, ranch, salt, black pepper, garlic salt).
  • -Add potatoes and carrots and mix all together
  • -Lay in a single layer the fish on top of the potato mixture. Season with the salt and black pepper
  • -Bake at 425 for 40 min (covered with foil)
  • -After the 40 min of baking uncover, top with cheese so it’s all covered well, and broil for 1-2 minutes.
  • Enjoy hot or warmed up the next day. It keeps well in the fridge for a few days and is a great meal to take to lunch for work or school.

    1. You didn’t include when to add the ranch – I’m guessing with the heavy cream mixture? 🙂 seems interesting, I’ll try it sometime.
